The easiest tortellini soup
This is the easiest tortellini soup you will ever make. We are all stuffed after Christmas and are enjoying some outdoor activities. It’s time to spend time with my family and we have eaten enough over the last few days. We all love soup, but today I don’t want to fuss. I take out some trusted prepared broth and a warm soup is on the way to the table for lunch.
Growing up in Sault Ste. Marie, Ricco is a household name. He makes the best tortellini, gnocchi, raviolli, etc. His cousin Gian-Pierro is a good friend in Amantea, Italy and I only use frozen products from Ricco’s. Some people make their own tortellini. When I lived in Iqaluit, Nunavut I experimented with various method and used won ton wrappers to make the tortellini. They were quite good. Now that I am back in southern Canada, I let Ricco do the work for me.

The easiest tortellini soup
This soup will be on your table in 30 minutes.
Ingredients
- 3 900 ml any brand chicken broth use homemade if you have it
- 2 large carrots finely diced
- 2 large celery stalks thinly sliced
- 1 small onion quartered easily removed
- 1 clove of garlic
- 1 sprig parsley
- 2 tbsp chopped parsley garnish
- 1 bag meat or cheese tortellini check out Ontario Ravioli brand
- 1 tsp salt salt to taste
Instructions

Pour the chicken broth into a large 6 quart pot to boil.
Add carrots, celery, onion, garlic, and sprig of parsley.
Bring to a boil and cook vegetable for 10 minutes.
Add tortellini and cook an additional 10 minutes or to your desired wellness. I like them al dente.
Remove from heat.
Ladle into bowls and garnish with parsley.
