The easiest tortellini soup

The easiest tortellini soup

This is the easiest tortellini soup you will ever make.  We are all stuffed after Christmas and are enjoying some outdoor activities.  It’s time to spend time with my family and we have eaten enough over the last few days.  We all love soup, but today I don’t want to fuss.  I take out some trusted prepared broth and a warm soup is on the way to the table for lunch.

Growing up in Sault Ste. Marie, Ricco is a household name.  He makes the best tortellini, gnocchi, raviolli, etc.  His cousin Gian-Pierro is a good friend in Amantea, Italy and I only use frozen products from Ricco’s.  He is generous to the community and well respected.  Check out his website and products at :  http://ricos.ca/

Some people make their own tortellini.  When I lived in Iqaluit, Nunavut I experimented with various method and used won ton wrappers to make the tortellini.  They were quite good.  Now that I am back in southern Canada, I let Ricco do the work for me.
