Leftover Prime Rib Pie

Prime Rib is decadent and delicious. My leftover prime rib pie lives up to the reputation of the cut of the meat.  We had prime rib on Sunday, and like every health cautious adult we don’t eat a lot of red meat.  It is winter and I like the comfort of a pie.  You can use any leftover meat to make this dish; I think it is the potatoes and cheese that add layers of flavour. It’s the Italian thing to add cheese.

Do Italians eat leftovers?

Most Italians don’t like leftovers, especially leftover meat; I am hoping to please my dad with this dish.  We’ll see.  He isn’t a fussy eater, but he doesn’t like leftovers. In fact, in Italy it is very rare to see anyone take leftovers home from a restaurant. Why? Italians only eat fresh meals.  Scraps left on plates are regarded as dog food not suitable for doggie bags.  When my parents were growing up, food was scarce and their families were large; very little food was leftover.  Any scraps on the plates were for the farm animals or the pets.

I always thought that the English invented meat pies, but the Greeks were wrapping pastry around meat first and then the Romans took their idea when they conquered Greece.  Upon further reading and according to Jamie Oliver, the Egyptians made pie-like dishes.  Jamie has a good read on his site   https://www.jamieoliver.com/news-and-features/features/the-history-of-pie/  

On his site you will find some truly amazing pie creations.  Mine today is a quick, no fuss pie to use my leftovers; however, it is tasty.  Now, if you are Italian, you know that we don’t do good pie crust.  It’s just that it isn’t our thing.  I do make it and I am working on an easy pie crust recipe, but today I use a ready made freezer pastry pie as the bottom of my Leftover Prime Rib Pie.  I want a pie crust bottom to hold the pie together.

All these leftovers will marry and become one fabulous dish for the table.

Leftover Prime Rib Pie

Use all your Sunday meal leftovers to make this comfort dish.

Ingredients

The Pie

  • 1 pre-made pie shell
  • 2 cups leftover mashed rutabaga any squash will do
  • 2 cups leftover prime rib any meat of your choice
  • 1 cup green peas
  • 1/4 cup onion flakes
  • 1 1/2 cups leftover gravy
  • 1 1/2 cups 4 cheese Italian blend of shredded cheese

Mashed potato topping

  • 2 cups leftover mashed potatoes
  • 1 egg
  • 2 tbsp parmesan cheese
  • 2 tbsp chopped parsley
  • 1 clove minced garlic

Horseradish sauce

  • 2 tbsp horseradish
  • 1/2 cup sour cream or yogurt
  • 1 tsp chives

Instructions

To assemble the pie

  1. Put the frozen pie shell into a large pie dish.

    Cook the shell and cool it.

    Place the rutabaga on the bottom.

    Follow with the beef.

    Next add the peas.

    Sprinkle with the onion flakes.

    Pour the gravy.

    Sprinkle 1 cup of the shredded cheese over the gravy.

    Spoon on the mashed potato topping and smooth it out.

    Sprinkle the remainder of the shredded cheese overtop.  

    Put in a preheated 375 degree oven for 30 minutes.

    Put it under the broiler on low for 3 to 5 minutes.

    Cut into wedges and garnish with the horseradish sauce.
