Polish Family Pork Patties

When Italian (that’s me) meets Polish(that’s my husband), you end up with twisted recipes.  My Polish Family Pork Patties with a twist served with an orzo(rice shaped pasta) is a blended dish.   John’s family is Polish/Czechoslovakian . One thing they share with Italians is a love for pork.  My mother-in-law Erika didn’t like to cook much, but she had a few signature dishes. Her Polish Family Pork Patties are a favourite in our house.

The Twist

Sometimes, we make a traditional mushroom and onion gravy for this dish, but I make a cranberry apple chutney to spark the taste of the pork.  These may be served on a good Kaiser roll, but tonight they complement some zucchini orzo. Granny Solski served them with potatoes and vegetables.  Polish meets Italian, just like our household. I can just picture my mother-in-law saying, they are good, but….

Polish Pork Patties With a Twist

A delightful pork pattie with a cranberry-apple chutney.

Ingredients

Pork Patties

  • 1 lb pork
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1 clove garlic minced
  • 2 tbsp chopped parsley
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup canola oil for frying
  • 1/2 cup seasoned Italian breadcrumbs for dredging

Cranberry/Apple Chutney

  • 2 cups fresh or frozen cranberries
  • 1/2 cup orange juice
  • 14 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp sugar
  • 2 tbsp Sortilege (Canadian Whisky Maple Syrup)
  • 1 tbsp Maple Syrup
  • 2 apples firm

Orzo with zucchini

  • 1 zucchini diced
  • 1 large onion diced
  • 2 tbsp olive oil
  • salt
  • pepper
  • 1 cup orzo rice shaped pasta
  • 1/4 cup butter
  • 1/4 cup parmesan

Instructions

Pork Patties

  1. Combine all ingredients in a bowl and mix.

    Use a 1/4 cup measurement to form balls and pat them down. 

    Dip each pattie into the Italian bread crumbs and coat.

    Fry each pattie on both sides until brown.

    Put patties on a pan lined with parchment paper.

    Finish cooking at 325 for 25 minutes.



Cranberry/Apple Chutney

  1. Combine cranberries, orange juice, cinnamon, nutmeg, sugar,maple syrup and Sortilege in a pan.

    Bring to a boil.

    After a few minutes add the chopped apples.

    Cook for a few more minutes.

    Keep warm. 

Orzo with Zucchini

  1. Put a pot of water to boil for the orzo pasta.

    Dice the zucchini and onions and sautee in a pan with 2 tbsp of olive oil.

    Cook the pasta for 7 minutes and keep some of the cooking water for the sauce. 

    After the onions and zucchini are golden in colour, add the orzo to the pan.

    Let the flavours blend together.

    Take the pan off the stove and add butter and parmesan cheese.



Plating the patties

  1. If you want to plate it like the picture, take a small ramekin and fill with the orzo.

    Invert the ramekin onto the plate.

    Take a pattie and place it on the orzo.

    Put some cranberry/apple chutney and put on the pattie.

    Place some sauce around the plate.

    Garnish the top with some Polish pickled onions and baby cucumbers.
