Summer Strawberry Soup

Summer Strawberry Soup is sweet and an anytime treat during the hot lazy days of summer.  Strawberries and yogurt come together in one bowl; it’s thick, refreshing and satisfying.  If you are like me, I crave more food when I am outdoors.  By the pool, I don’t want heavy foods.  I like this recipe because I can put it in smaller bowls for perfect snack size portions.

My favourite memories of strawberries are from our camp at Red Rock on Lake Superior in Northern Ontario.  We had strawberry plants all the way up and onto the road.  We would spend hours picking and then a few minutes eating.  My nonna loved the activity and it kept us busy.  The strawberries were wild, small and sweet.  I love the memories of us sitting on rocks in the lake enjoying a fresh bowl of strawberries.

I think the Peach Schnapps makes the recipe, but you can eliminate it.  LOL  The soup will be good regardless.

The honey coats and sweetens the strawberries.  Tossed with Peach Schnapps, it is a match made in heaven.

Orange juice gives this recipe a splash of citrus.

Everything goes into a bowl.

Blend it by hand or use a food processor.

Tiny Bubbles everywhere.

Pour into glass bowls and refrigerate for at least two hours.  The balsamic glaze adds zest to this soup.

Ingredients

The Soup

  • 2 cups straberries
  • 1/2 cup orange juice
  • 1 cup yogurt
  • 2 tbsp honey
  • 1/2 cup sour cream
  • 2 tbsp peach schnapps optional
  • strawberry balsamic glaze garnsih
  • extra strawberries to garnish

Balsamic Glaze

  • 2 cups balsamic vinegar
  • 1/2 cup any flavour jam

Instructions

The Soup

  1. Wash and cut strawberries.

    Add honey and peach schnapps to strawberries and let sit for 5 minutes.

    Place yogurt, sour cream and orange juice in a bowl and then add strawberry mixture.

    Use a hand blender to pulse.

    Refrigerate for at least two hours.

    Garnish with fresh strawberries and balsamic vinegar glaze.


Balsamic Glaze

  1. Combine vinegar and any jam in a medium size pot.

    Cook over medium/low heat until it thickens and reduces.


Recipe Notes

 

The peach schnapps is optional, but does kick up the flavour.  🙂

You can buy balsamic glazes at any grocery store.  You can make your own by combining balsamic vinegar and any jam of your choice and reducing over heat. 

This makes a nice cold drink over crushed ice too.
